Ingredients

  • 2 bags Success® Brown Rice
  • 1 lb ground chicken
  • 2 tbsp vegetable oil, divided
  • 1/4 cup teriyaki sauce
  • 1 tbsp soy sauce
  • 3 tbsp seasoned rice wine vinegar
  • 1 tbsp fresh ginger root, grated
  • 1/2 cup green onion, thinly sliced
  • 1/4 cup red bell pepper, minced
  • 2 tbsp toasted sesame seeds

Instructions

    Step 1: Prepare rice according to package directions.

  •  Step 2:  Form the ground chicken into mini patties. Heat 1 tablespoon of oil in a medium pan over medium heat. Cook patties for 3 minutes on each side or until cooked through. Cook in batches if needed. Place cooked patties on a paper-towel-lined plate to remove excess oil.

  •  Step 3: Place patties and teriyaki sauce in a medium bowl. Toss until each patty is fully covered with teriyaki sauce.

  •  Step 4: In a small bowl, combine soy sauce, rice wine vinegar and ginger root.

  •  Step 5: Heat the remaining oil in a large skillet or wok over high heat. Add cooked rice, green onion, bell pepper and soy sauce mixture; stir-fry for 3 minutes.

  •  Step 6: Place rice mixture on serving plate and top with the teriyaki chicken. Sprinkle sesame seeds on top.
